School Lunch Ideas for allergy-sensitive classrooms

In our school, we recently received a note from the Principal that some of the classrooms had students which were sensitive or allergic to various items.  Not only does this cause a serious health concern for these children, it reduces the lunch alternatives for the rest of the classmates.  There have been some great studies completed that tend to agree that with awareness, a child with allergies should be able to feel safe in their school-eating environment without having to be seperated from the rest of the children during eating.

I thought that a good way to help increase awareness, and to help parents out would be to start a quick blog on lunch ideas that people use - either for their child that has allergies/sensitivities, or for their children that attend a classroom where someone has an allergy. 

In actual fact, likely that these ideas could be used even if there were no food sensitivities to deal with on either side.

So, to get things started, here are some of the ideas that we use to keep lunch fun, "nutritional" and safe!

- Pasta with Tomato sauce - sent in a thermos.  Eaten at first break to ensure freshness
- Make your own Pizza - thin slider buns toasted, pizza sauce, shredded chees, peperoni
- Make your own S'Mores - a treat.  Graham wafer, marshmallow, choc. chips
- Hot Dog - weiner cooked and sent in hot water in thermos (for fun we send ketchup and mustard in syringes)
- Kraft dinner - OK, not so healty, but a treat that is enjoyed sometimes
- Hot soup - in a thermos. Again consumed at first break to ensure freshness
- Sub sandwich - favourite cold meat sent on a sub bun
- Cheese Sticks - if you have a bread maker, use the dough setting and then take out the dough and make your own sticks.
- Waffles - yes, they eat them cold (and sometimes plain!)
